Lemon Blueberry Cookies

I’d been looking for a quick cookie recipe for the spring. One of my favorite flavors for baking is lemon. Here in the UP we have quite a lot of blueberries too, so what combination could be better? And just like that, lemon blueberry cookies were born! These little cookies are a different – they’re made in a mini muffin tin. The cookies are a shortbread base, with lemon zest, and I use the tiny wild blueberries that we pick each summer.

Assembly is easy…really!

These cookies are genuinely easy to throw together. It all comes together in the food processor. That happy little machine does all the work for you! I love the light scent of lemon as the cookie dough is whirling around in the bowl. In just a few short minutes, you have your shortbread dough, and all you have to do is add blueberries.

Your dough will look very crumbly and not cookie like at all, but don’t worry. I promise that when you spoon the crumbs into the tin, and press down, they come together beautifully. These lemon blueberry cookies are just a few minutes from yum.

Though these cookies be small, they be really tasty. I never tire of these delightful cookies. The delicate lemon, the buttery crunch, the tart and juicy pop of the blueberries make my mouth sing happy songs.
